Old Santa Fe Trail Beef Jerky started in 1988, when founder and CEO Matthew Chavez and his brother and brother-in-law jointly owned a meat market in the North Valley region of Albuquerque and began making traditional New Mexico beef jerky (carne seca). It was during this time that Matthew created four simple recipes that are still in use today: plain, pepper, green and red peppers. This delicious artisanal beef jerky at Old Santa Fe Trail Beef Jerky was a big success, and soon, retailers across New Mexico placed large orders to sell in their own stores. To meet growing demand, Matthew moved his beef jerky factory to a new factory on Route 66, where he designed and built his own unique oven to increase capacity and improve the slow drying process. These innovations helped the store grow to 18 employees, including Matthew's son, Andrew and Adam Chavez.
