Two years later, when preparing to open her own bar, Jane and Seeb found a small batch of gin distillation, igniting the sparks of Manchester gin now. In their restaurant, Seb and Jane began to distill gin 60 liters at a time. Manchester Gin hopes to produce 800 bottles of wine a year. They are distilled at night, bottled, labeled and sold during the day. Manchester Gin went on to make 25,000 bottles in the restaurant, and the winery won the Gold Award for "Master of Winemaking".
